Super easy granola here, give it a try and you’ll never buy store-bought again! Great to enjoy as is, as a cereal with unsweetened vanilla almond milk, or as a snack with apple slices and peanut butter.

The following makes 3 and 1/2 cups (adapted from The Gracious Pantry):

  • 3 cups old-fashioned oats
  • 1/2 cup chopped walnuts
  • 1 Tbsp flaxseed
  • 1/2 cup unsweetened applesauce
  • 1/4 cup agave nectar (you could also use honey)
  • 2 tsp cinnamon
  • Sprinkle kosher salt
  • Handful of low-sugar craisins or raisins

Preheat oven to 325. Line a large baking sheet with parchment, or a silpat.

In a large bowl, mix the oats, nuts and flaxseed.

In another bowl, mix the remaining ingredients (applesauce, honey, cinnamon and just a pinch of salt). Once mixed, add these ingredients to the oat mixture, and blend well.

Spread onto prepared baking sheet and bake for 45 – 60 minutes. Stir every 10-15 minutes to ensure granola doesn’t burn. It’ll be done when it’s dry and golden brown. Remove from the oven and cool before serving or storing.

Once cool, add some craisins (50 % less sugar) or raisins if you’d like, then store in an airtight container in the fridge.
