Sweet Potato Hash With Roasted Red Pepper

I was out to dinner with some girlfriends this past weekend and had a delicious side dish of sweet potato hash. What seemed unique in this hash was the addition of roasted red pepper…delicious! Decided to tweak a few of the ingredients and whip up a batch of my own. Out to dinner I enjoyed this side with grilled salmon, and at home we enjoyed it with grilled steak. Regardless of which protein you choose to serve, this hash is a great side dish.

Sweet Potato Hash With Roasted Red Pepper

The following serves 2-3 (compliments of This Girl):

  • 2 sweet potatoes, cubed (use whatever color you like, pictured here are white sweet potatoes)
  • 1 small onion, chopped
  • 2 roasted red peppers, chopped – save yourself time and use the jarred kind
  • 1 cup or so of green beans, ends trimmed
  • 2 large cloves of garlic, minced
  • Red pepper flakes
  • Salt and pepper

Bring a medium pot of water to boil and add sweet potatoes. Boil for 3 minutes, then add the green beans and boil for 2 more minutes. Drain potatoes and green beans and run under cold water to stop the cooking process.

Saute onions over medium-high heat in a large skillet until softened, 3-5 minutes. Add garlic and a pinch of red pepper flakes and saute until fragrant, about 1 minute. Season onions with salt, then add the cooked potatoes and green beans to the skillet and saute until golden brown on one side. Flip potatoes and add roasted red peppers and continue to saute until the other side of the potatoes brown. Season with salt and pepper to taste.

Serve with grilled fish, chicken or steak.
