Once you try this homemade breakfast / snack bar recipe, I bet you won’t want to waste your money anymore on the store-bought stuff….and these are healthier too!

Cranberry-Oat Bars

The following makes 12 bars (compliments of the South Beach cookbook):

  • 1/2 cup natural creamy no-sugar added peanut butter
  • 1 tsp pure vanilla extract
  • 2 cups old-fashioned rolled oats
  • 2/3 cup dried cranberries, coarsely chopped
  • 1/2 cup walnut halves, coarsely chopped
  • 1/4 cup granular sugar substitute (I only used half)
  • 3 large egg whites (6 Tbsp)
  • 1/4 tsp salt

Preheat the oven to 350. Line a 9 x 9 baking pan with parchment, leaving a 2-inch overhang on two sides.

In a large bowl, whisk together the peanut butter, vanilla and 1/4 cup water. Add the oats, cranberries, walnuts, sugar substitute, egg whites and salt. Mix with your hands to combine. Transfer to the pan and pat with moistened hands until even.

Bake for 15 minutes, or until crisp and set. Cool in the pan briefly, then using the overhang, lift out of the pan. Cut immediately into twelve 3 x 2 1/2-inch bars.

Heads up, my bars turned out a little crumbly. Next time I might let them set a few more minutes before cutting them, Crumbly or not, these are still delicious!
