Cilantro Noodles

This side dish comes together in a flash with just a few ingredients and is super tasty! These noodles are a great go-to for quick week night side dishes, as well as picnics or potlucks because the dish travels well. Whip up a batch in about 5 minutes and see for yourself!

Cilantro Noodles

The following serves 4 as a side dish (compliments of Cuisine at Home):

  • 3 packages ramen noodles (3 oz each), discard the seasoning packets included with the ramen
  • 2 tsp canola oil
  • 1 tsp toasted sesame oil
  • 2 Tbsp minced shallots
  • 2 Tbsp low-sodium soy sauce
  • Salt to taste
  • 1/2 cup chopped fresh cilantro

Blanch noodles in boiling water in a medium pot, 3 minutes. Drain noodles and rinse under cold water. Use a salad spinner to remove excess water.

Heat canola oil and sesame oil in a large nonstick skillet over medium-high. Add shallots and saute until softened, 2 minutes.

Deglaze skillet with soy sauce, then add noodles, tossing to combine. Season noodles with salt; stir in cilantro right before serving.

This Girl’s tips: I didn’t have sesame oil on hand, so when I sautéed the shallots, I also added a palm-full of sesame seeds to the pan to toast. Also, the recipe says to add the cilantro just before serving, but I cooled the noodles down a bit first, then added the cilantro and stored in the fridge until ready to serve. These noodles are great cold!
