Grilled Green Beans and Spinach

Sometimes coming up with a quick side dish that’s different from what you always seem to make is the hardest part about building a complete meal. Here’s a simple side dish that you can serve up along any grilled meat or fish. And the best part is, you can use your grill for the meat AND the side for easy clean up!

Grilled Green Beans and Spinach

The following serves 2 (compliments of Food Network Magazine):

  • Green beans (they recommend 3/4 lb)
  • Olive oil
  • Salt and pepper to taste
  • 2 handfuls of baby spinach (original recipe calls to grill 1 bunch of scallions, but I used spinach instead)
  • Lemon juice

Toss all ingredients together on a double sheet of foil. Fold to seal.

Grill 18 minutes, turning once. Be careful opening the foil package as it’ll be hot.

If the green beans looks dry, toss with a little more olive oil. Drizzle with some lemon juice and season with salt and pepper to taste.
