Broccoli is such a versatile veggie. You can serve it as an appetizer, as a side or part of a main dish. This is a quick and delicious recipe that you can dish up any way you want!
The following serves 2 (Compliments of foodnetwork.com):
- I head of broccoli, chopped
- Olive oil
- Salt and pepper
Preheat a baking sheet on the lower rack in a 450 oven. Toss chopped broccoli with a splash of olive oil, a handful each of breadcrumbs and parmesan, salt and pepper. Place on the hot baking sheet and top with more cheese and breadcrumbs; roast until golden, 10 – 15 minutes.
The original recipe called for blanching the broccoli before roasting, but I recommend roasting raw.
