Beer Cheese Soup

I’m a sucker for beer cheese soup, especially around this time of year! This is a super easy recipe for a great beer cheese soup that I found from a while ago that has now become a fall-time staple in my house. You’ll be addicted too, whip up a batch and see for yourself!

Beer Cheese Soup

The follow serves 4 (or so the recipe says, but this gets gobbled up by 2 in no time!):

  • 1 Tbsp unsalted butter
  • 1/2 cup chopped onion (I like to add about 3/4 of a cup)
  • 1/2 tsp minced garlic (I like to use a tad bit more though)
  • 1 tsp Worcestershire sauce
  • 12 ounces (1 bottle) light beer
  • 14 and 1/2 ounces chicken broth
  • 3 Tbsp cornstarch
  • 2 cups half and half
  • 2 heaping cups shredded sharp cheddar cheese
  • Chopped chives or green onions and some extra cheese for garnish

Melt the butter in a soup pot over medium heat. Add the onion, garlic and Worcestershire sauce and stir well.  I like to sweat the onions and garlic a little at this stage as well.

Add the beer and raise the heat to high and boil for 3 minutes to evaporate the alcohol. Add the chicken broth and bring the soup back to a boil. Lower the heat to medium-low and simmer.

Combine the cornstarch with 3 Tbsp water and stir until smooth. Set aside.

Add the half and half and shredded cheese to the soup. Stir constantly until the cheese melts. Then stir in the cornstarch mixture.

Stir constantly until the soup is thick, about 2 minutes.

This Girl’s tip: I like to leave the soup over simmer for a little longer than 2 minutes to make sure the flavors are combined well.  When I serve, I also garnish with chives or green onions, ground black pepper and a little extra cheese on top along with a side salad for a little crunch. The side salad will also help stretch the soup if you have healthy eaters in your house too 🙂
