Watermelon Salad with Feta and Mint

What a refreshing summer salad! I’m glad I spotted it in Our Ohio magazine so I could give it a try for one of our many festivities this weekend!

Watermelon Salad with Feta and Mint

Makes 4 servings:

  • 4 cups diced seedless watermelon, chilled
  • 1 cup diced or crumbled feta cheese
  • 1/2 cup fresh mint leaves, cut into thin strips
  • 2 tbsp extra virgin olive oil
  • Ground pepper to taste

Combine all the ingredients. Chill to blend flavors. Taste and add salt if desired, but the feta cheese serves as the salty component.

Whenever I see MINT, I am reminded of the house we grew up at in Cleveland. Spearmint grew… WILD !!!! So wild, I am talking invasively WILD. We moved to our next home when I was 6. I was so sad to be leaving the spearmint, I brought some and planted it behind the garage. My Mom did not know. She DID find out sometime later when IT started to take over behind the garage. I BET it’s there today. LOL I fessed up to bringing IT with me … she was not very happy. Always makes ME chuckle though. 🙂

That’s a great story, you should have continued to carry it from house to house, LOL! Mint does grow like a weed…Alex’s sister gave me a bunch so I’ve been using it in different things all week!
